

Meet the Winemaker – Gus Dale of 7 Springs Winery

Seven Springs Vineyard is a premium wine producer, situated on the R320 Hemel en Aarde Valley road, between the seaside town of Hermanus and the spa town of Caledon. The vineyard nestles between Shaws Mountain to the north and the Teslaarsdal Mountain Range to the south, with Walker Bay and the Atlantic Ocean beyond these mountains. It is this oceanic influence, coupled with our shale derived soils, known locally as Bokkeveld Shale, that gives our vines the potential to produce exceptional grapes from both north and south facing vineyards. Noble varieties, Chardonnay, Sauvignon Blanc, Syrah and Pinot Noir, have been planted to express the full potential of each cultivar.
Vineyard & Terroir
Our soil type is called Bokkeveld Shale (known as Malmesbury Shale) and our vineyard is situated just 8 kilometers from the cooling Atlantic Ocean. A unique microclimate in our vineyard ensures slower ripening of the grapes.
Winemaking & Ageing
Our winemaking (and vineyard approach) is one of minimum intervention. That is a minimal use of fungicides and pesticides in the growing of our vines and as natural a process as we can in the winery. Our new winemaker / vigneron Gus is very keen on a more ‘organic’ approach to wine production, so expect some viticultural changes in this area in the future. Although our vines were only planted in 2007 and 2008 our wines have so far shown excellent aging potential, both in our red and white wines. In fact our Sauvignon Blanc, in our opinion, is better at 3 to 5 years old.
MEET THE WINEMAKER: GUS DALE
Our new winemaker / vigneron is Englishman Gus Dale, one of only a handful of British winemakers in South Africa. Gus spent 14 years working in Burgundy (where he studied viticulture and oenology). While in Beaune, he developed a real passion for the vineyards and cellar, so for the last 4 years of his time there, he ran a small 6Ha Domaine specialising in the organic production of Pinot Noir and Chardonnay. He has lived in South Africa for over 10 years and for the last few years has been setting up Paul Roos Wines in Stellenbosch, a social empowerment project allowing the farm workers to run and manage their own business. The project is specifically aimed at providing an educational program for the children of the farm workers, from crèche through to university. When interviewed for the position, Gus stood out as someone who is not only very capable for the tasks involved but someone who can help us take Seven Springs to the next level.
